2 apples, gala, peeled and grated
150 grams butter, melted and at room temperature
150 grams brown sugar
3 eggs
1 ounce cognac
150 grams Gamesa® pancake mix
1 teaspoon baking powder
1 pinch salt

Preheat the oven to 200ºC.
Place 12 paper liners in a muffin tray.
Beat the butter with the sugar until a creamy consistency is achieved.
Add the eggs one at a time until well integrated.
Then add the grated apple with the shot of cognac.
Now it's time to add the flour, baking powder, and a pinch of salt.
Mix well and pour the mixture into the muffin liners, filling only up to 2/3.
Bake for 25 minutes; this will depend on the oven, watch for them to start turning golden. Do the toothpick test to ensure they are cooked through.
