Apple and Cognac Muffins

  • 2 apples, gala, peeled and grated
  • 150 grams butter, melted and at room temperature
  • 150 grams brown sugar
  • 3 eggs
  • 1 ounce cognac
  • 150 grams Gamesa® pancake mix
  • 1 teaspoon baking powder
  • 1 pinch salt

  • Preheat the oven to 200ºC.
  • Place 12 paper liners in a muffin tray.
  • Beat the butter with the sugar until a creamy consistency is achieved.
  • Add the eggs one at a time until well integrated.
  • Then add the grated apple with the shot of cognac.
  • Now it's time to add the flour, baking powder, and a pinch of salt.
  • Mix well and pour the mixture into the muffin liners, filling only up to 2/3.
  • Bake for 25 minutes; this will depend on the oven, watch for them to start turning golden. Do the toothpick test to ensure they are cooked through.
