Banana and Bran Muffins

Combining the great properties of wheat bran and the sweetness of banana, these muffins will make you feel good inside and out. Fluffy and with the moisture that characterizes a good muffin. Excellent for a light breakfast in the morning.

  • 2 bananas, ripe bananas
  • 1 1/2 cups wheat bran, (can be substituted with 2 cups of original All Bran)
  • 1 egg
  • 1 cup low-fat milk
  • 1 tablespoon baking powder
  • 1 1/4 cups whole-wheat flour
  • 1/2 cups brown sugar
  • 1 pinch salt
  • 1 teaspoon vanilla essence

  • Preheat the oven to 180°C Peel and mash the bananas in a bowl.
  • In another bowl, combine the wheat bran and milk until you notice that the bran is completely wet.
  • Subsequently, add the mashed bananas to the bran mixture, mixing all the ingredients well. Using a mixer, incorporate the flour, baking powder, vanilla, salt, and brown sugar.
  • Finally, add the egg and continue beating until the consistency is smooth. Place in the muffin pan. (You can use muffin liners or simply cooking spray to prevent sticking to the pan.)
  • Bake at 200°C for 25 minutes or until a wooden toothpick comes out clean.
