Ingredients

  • 2 bananas, mature
  • 1 1/2 cups wheat bran, (can be replaced by 2 cups of all bran original)
  • 1 egg
  • 1 cup skim milk
  • 1 tablespoon baking soda
  • 1 1/4 cups whole wheat flour
  • 1/2 cups brown sugar
  • 1 pinch salt
  • 1 teaspoon liquid vanilla

Preparation

Preheat the oven to 180 ° C Peel and crush the bananas in a bowl.
In another bowl, place the wheat bran and milk until you feel that the bran is completely moist.
Subsequently, the crushed bananas are added to the bran mixture, mixing all the ingredients well. With the blender , the flour, baking powder, vanilla, salt and brown sugar are incorporated.
Finally the egg is added and continue beating until the consistency is homogeneous. They are placed in the muffin pan. (You can use muffin paper or simply cooking spray to avoid sticking to the pan.
Bake at 200 ° C for 25 minutes or until a wooden stick comes out clean.

PRESENTATION

It can be served warm with a teaspoon of agave honey or with powdered sugar sprinkled on them. Perfect for breakfast!

TIPS

In this recipe you can substitute brown sugar for 1/2 cup of sugar substitute to decrease the calories it brings.
