1 cup pancake mix, of bran, preferably
1 cup all-purpose wheat flour
1/2 cups whole-wheat flour
1 egg
2 teaspoons baking powder
1 cup cow's milk, with a tablespoon of lemon juice
1/3 cups honey
70 grams butter
1 tablespoon cinnamon
2 tablespoons chia seeds
60 grams sunflower seeds
90 grams cranberries

Preheat the oven to 180ºC.
In a bowl, mix the flours, baking powder, and cinnamon.
Slowly add the butter, egg, milk, and honey.
Finally, add the sunflower seeds, blueberries, and chia. Mix gently.
Place in floured muffin molds or with liners.
Bake at 180ºC for 15-20 minutes until lightly browned. Let cool.
