Chia and Blueberry Muffins

  • 1 cup pancake mix, of bran, preferably
  • 1 cup all-purpose wheat flour
  • 1/2 cups whole-wheat flour
  • 1 egg
  • 2 teaspoons baking powder
  • 1 cup cow's milk, with a tablespoon of lemon juice
  • 1/3 cups honey
  • 70 grams butter
  • 1 tablespoon cinnamon
  • 2 tablespoons chia seeds
  • 60 grams sunflower seeds
  • 90 grams cranberries

  • Preheat the oven to 180ºC.
  • In a bowl, mix the flours, baking powder, and cinnamon.
  • Slowly add the butter, egg, milk, and honey.
  • Finally, add the sunflower seeds, blueberries, and chia. Mix gently.
  • Place in floured muffin molds or with liners.
  • Bake at 180ºC for 15-20 minutes until lightly browned. Let cool.
