Mango Muffins

This is a special recipe for one of those weekends when you'd like to surprise your family with a delicious breakfast that doesn't take too much time. How about some muffins? If you're fortunate enough to live in a climate where you can find ripe mangoes, these delicious mango muffins are the recipe you need.

  • 1 mango, peeled and diced
  • 2 cups flour
  • 1/2 cups sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoons salt
  • 1 cup cow's milk
  • 1/4 cups vegetable oil
  • 2 eggs
  • 1 teaspoon almond extract

  • In a large bowl, mix all the dry ingredients.
  • Preheat the oven to a high temperature (200°C).
  • In another medium bowl, mix the milk with the oil, eggs, and almond extract.
  • Add the liquid ingredients to the bowl of dry ingredients and gently fold in, being careful not to overmix.
  • Finally, add the mango cubes to the mixture and transfer it to a muffin pan that you have previously sprayed with cooking spray.
  • Bake until golden brown, about 20-25 minutes.
  • Remove the muffins from the pan and let them cool on a wire rack.
