Papaya and Peanut Muffins

A new option for healthy eating, and also one of the most practical. My son loved them, and it's no longer a daily battle for him to eat healthily. They are easy and delicious.

  • 120 grams Gamesa® pancake mix
  • 100 grams sugar
  • 1 teaspoon baking powder
  • 50 grams butter
  • 1 egg
  • 200 grams papaya
  • 1 lime, (the juice)
  • 2 tablespoons honey
  • 75 grams peanuts
  • 1/4 cups almonds

  • Preheat the oven to 180ºC.
  • Separate the pulp from the papaya and process it with the lemon juice. Set aside.
  • In a bowl, mix the flour, sugar, and baking powder.
  • Add the melted butter, egg, honey, and the papaya mixture to the flour and mix with a wooden spoon or spatula.
  • Finally, add the peanuts. Mix gently.
  • Divide the mixture into muffin molds, previously floured or lined with cupcake liners.
  • Bake at 180ºC for 15 to 20 minutes. Let cool.
