Papaya and Peanut Muffins

A new option for healthy eating, and also one of the most practical. My son loved them, and it's no longer a daily battle for him to eat healthily. They are easy and delicious.

120 grams Gamesa® pancake mix
100 grams sugar
1 teaspoon baking powder
50 grams butter
1 egg
200 grams papaya
1 lime, (the juice)
2 tablespoons honey
75 grams peanuts
1/4 cups almonds

Preheat the oven to 180ºC.
Separate the pulp from the papaya and process it with the lemon juice. Set aside.
In a bowl, mix the flour, sugar, and baking powder.
Add the melted butter, egg, honey, and the papaya mixture to the flour and mix with a wooden spoon or spatula.
Finally, add the peanuts. Mix gently.
Divide the mixture into muffin molds, previously floured or lined with cupcake liners.
Bake at 180ºC for 15 to 20 minutes. Let cool.
