Pear and Walnut Muffins

Delicious muffin recipe with a rich combination of juicy pieces of pear and the pleasant flavor of walnut with a crunch topping; I love making them because they are very easy to prepare.

  • 2 cups Gamesa® pancake mix
  • 1/2 cups raw sugar
  • 2 eggs
  • 1 teaspoon cinnamon powder
  • 1 teaspoon baking powder
  • 1/2 teaspoons baking soda
  • 1/2 cups vegetable oil
  • 3/4 cups plain yogurt
  • 1 teaspoon vanilla essence
  • 4 pears, chopped into pieces
  • 3/4 cups walnuts, chopped
  • 3/4 teaspoons salt

  • Preheat the oven to 180ºC and prepare the muffin molds with paper liners.
  • In a bowl, mix the dry ingredients: flour, sugar, cinnamon, baking powder, salt, and baking soda.
  • In the mixer, beat the eggs with the oil, add the natural yogurt and the vanilla, and beat perfectly.
  • Gradually add the dry ingredients and make a homogeneous mixture.
  • The pears are cored and cut into small cubes and added to the previous mixture with the walnuts; without beating, mix perfectly.
  • On the other hand, mix three tablespoons of brown sugar with a few chopped walnuts and cinnamon, which will be the crunch topping.
  • Fill the cupcake liners with tablespoons of the mixture, making sure not to exceed 3/4 of the capacity. Sprinkle the muffins with the topping.
  • Bake at 180ºC for about 20 to 25 minutes, until the muffins are golden or if a toothpick inserted in the center comes out clean. Once baked, allow to cool.
