Delicious muffin recipe with a rich combination of juicy pieces of pear and the pleasant flavor of walnut with a crunch topping; I love making them because they are very easy to prepare.
Preheat the oven to 180ºC and prepare the muffin molds with paper liners.
In a bowl, mix the dry ingredients: flour, sugar, cinnamon, baking powder, salt, and baking soda.
In the mixer, beat the eggs with the oil, add the natural yogurt and the vanilla, and beat perfectly.
Gradually add the dry ingredients and make a homogeneous mixture.
The pears are cored and cut into small cubes and added to the previous mixture with the walnuts; without beating, mix perfectly.
On the other hand, mix three tablespoons of brown sugar with a few chopped walnuts and cinnamon, which will be the crunch topping.
Fill the cupcake liners with tablespoons of the mixture, making sure not to exceed 3/4 of the capacity. Sprinkle the muffins with the topping.
Bake at 180ºC for about 20 to 25 minutes, until the muffins are golden or if a toothpick inserted in the center comes out clean. Once baked, allow to cool.
