Ricotta and Peach Muffins

  • 2 1/4 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoons baking soda
  • 1 pinch salt
  • 1 1/3 cups brown sugar
  • 1/2 cups vegetable oil
  • 1/2 cups ricotta cheese
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 1 cup canned peaches, in cubes
  • whipped creams, for decoration

  • In a bowl, sift all the dry ingredients: flour, baking powder, and salt.
  • In another bowl, mix the sugar and oil, beating until fluffy. Add the eggs one by one, then the cheese and vanilla until you have a beautiful, smooth, and fluffy mixture. Finally, add the peaches and gently fold in with a spatula.
  • Finally, place your mixture in greased molds or with liners if you prefer. Bake them in the oven at 190ºC for 35 to 40 minutes.
