Rompope and Cherry Muffins

Rompope is one of the quintessential Mexican beverages, its flavor is unmistakable and in this recipe it triumphs by combining it with cherries. A fluffy, moist muffin full of flavor, I invite you to try it!

  • 90 grams butter, softened
  • 80 grams sugar
  • 125 grams flour, sifted
  • 2 eggs
  • 90 milliliters rompope
  • 1 teaspoon baking powder
  • 15 cherries, chopped

  • Preheat the oven to 220 degrees Celsius for at least 20 minutes.
  • Cream the butter with the sugar until you achieve a smooth and fluffy mixture.
  • Incorporate the eggs one by one and beat until fully integrated.
  • Pour in the sifted flour and baking powder.
  • Once the previous mixture is well beaten, it’s time to incorporate the cherries and the rompope.
  • Fill the muffin molds with the mixture, almost to the edge.
  • Lower the oven temperature to 200 degrees and bake for approximately 15 minutes, this will depend on the oven.
  • They will be ready when they are slightly golden and when you do the toothpick test, it comes out dry.
