The rompope is one of the Mexican drinks par excellence, its flavor is unmistakable and in this recipe triumphs when combined with cherries. A spongy muffin, moist and full of flavor, I invite you to try it!

Ingredients

8 portions
  • 90 grams butter, ointment
  • 80 grams sugar
  • 125 grams flour, sifted
  • 2 eggs
  • 90 milliliters eggnog
  • 1 teaspoon royal baking powder
  • 15 cherries, chopped

Preparation

Preheat the oven to 220 degrees centigrade for at least 20 minutes.
Beat the butter with the sugar until you get a soft and fluffy cream.
Incorporate the eggs one by one and beat until integrated.
Pour the sifted flour and the baking powder.
Once the previous mixture is well beaten, it is time to incorporate the cherries and the eggnog.
Fill the muffin molds with the mixture, almost to the edge.
Lower the temperature of the oven to 200 degrees and bake approx 15 minutes, this will depend on the oven.
They will be ready when they are lightly browned and when making the test of the plate, it comes out dry.

PRESENTATION

Serve warm accompanied with a good cup of hot chocolate.

TIPS

You can add more rompope if you want a very intense flavor. If you do not have cherries on hand, you can use dehydrated blueberries.
