Rum and Raisin Muffins

A recipe full of flavor and with an incredible texture, ideal for an afternoon coffee. The secret is to use quality ingredients, such as pure butter, farm-fresh eggs, and a good rum. The intense flavor can be felt in every bite.

  • 90 grams butter
  • 125 grams sifted flour
  • 1 teaspoon baking powder
  • 2 eggs
  • 80 grams sugar
  • 1 ounce rum
  • 80 grams raisins

  • Let the raisins soak in the shot glass of rum for a couple of hours before preparing the recipe.
  • Preheat the oven to 220ºC.
  • Grease and flour 8 muffin molds.
  • Melt the butter and wait for it to cool; meanwhile, beat the eggs with the sugar at high speed until they become a fluffy and smooth mixture.
  • Add the cooled butter and continue beating at high speed until fluffy.
  • Lower the speed to the minimum and add the flour along with the baking powder. Continue beating until everything is well integrated.
  • Add the raisins with the rum and mix well.
  • Pour the mixture into the muffin molds almost to the edge.
  • Lower the oven temperature to 200 degrees Celsius and bake the muffins for approximately 15 minutes. The baking time depends on the oven.
  • Once lightly golden, take them out of the oven and unmold.
