Strawberry and Chocolate Chip Muffins

Muffin version of a pancake recipe I invented a few years ago to treat my guests at a home breakfast. It brings me very pleasant memories to savor it now in this version.

4 cups Gamesa® pancake mix
3/4 teaspoons baking soda
1/2 cups sugar
1 1/3 cups cow's milk
1/2 cups vegetable oil
2 eggs
1 1/3 cups strawberries, very well disinfected diced into 1 centimeter cubes
1 cup semi-dark chocolate chips
1 tablespoon vanilla essence, natural
18 strawberries, whole very well disinfected (for presentation)
1/4 cups chocolate chips, (for presentation)

Preheat the oven to 180°C.
In a large bowl, perfectly mix the Gamesa® Traditional Pancake Flour, sugar, and baking soda.
In another bowl, mix the milk, vegetable oil, vanilla extract, and eggs with a whisk.
Add this mixture of milk, eggs, oil, and vanilla extract to the bowl from step 2 that contains the dry ingredients. Mix until all lumps are dissolved.
Add the diced strawberries and chocolate chips. Mix until well combined.
Grease and flour the muffin molds.
Fill the muffin molds with the mixture from step 5 until 3/4 full.
Bake for 30 minutes or until a toothpick inserted comes out clean and dry.
Once out of the oven, let cool to room temperature to remove from molds.
