Strawberry and Chocolate Chip Muffins

Muffin version of a pancake recipe I invented a few years ago to treat my guests at a home breakfast. It brings me very pleasant memories to savor it now in this version.

  • 4 cups Gamesa® pancake mix
  • 3/4 teaspoons baking soda
  • 1/2 cups sugar
  • 1 1/3 cups cow's milk
  • 1/2 cups vegetable oil
  • 2 eggs
  • 1 1/3 cups strawberries, very well disinfected diced into 1 centimeter cubes
  • 1 cup semi-dark chocolate chips
  • 1 tablespoon vanilla essence, natural
  • 18 strawberries, whole very well disinfected (for presentation)
  • 1/4 cups chocolate chips, (for presentation)

  • Preheat the oven to 180°C.
  • In a large bowl, perfectly mix the Gamesa® Traditional Pancake Flour, sugar, and baking soda.
  • In another bowl, mix the milk, vegetable oil, vanilla extract, and eggs with a whisk.
  • Add this mixture of milk, eggs, oil, and vanilla extract to the bowl from step 2 that contains the dry ingredients. Mix until all lumps are dissolved.
  • Add the diced strawberries and chocolate chips. Mix until well combined.
  • Grease and flour the muffin molds.
  • Fill the muffin molds with the mixture from step 5 until 3/4 full.
  • Bake for 30 minutes or until a toothpick inserted comes out clean and dry.
  • Once out of the oven, let cool to room temperature to remove from molds.
