Honey and Granola Muffins

A recipe for muffins with the delicious flavor of honey combined with granola and aromatic cinnamon and clove, perfect for enjoying in the afternoon with coffee.

  • 3/4 cups Gamesa® pancake mix
  • 1/4 cups sugar
  • 1/2 cups honey
  • 2 tablespoons vegetable oil
  • 1 tablespoon cinnamon powder
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 50 grams butter
  • 3 eggs, (separating the yolks from the whites)
  • 1 teaspoon brandy
  • 1 pinch clove, in powder
  • 1 cup granola
  • 1 teaspoon lime juice

  • Beat the egg whites with a pinch of salt until stiff peaks form, gradually adding the sugar.
  • Meanwhile, preheat the oven and prepare the muffin molds with red liners.
  • The yolks are beaten until ribbon stage and mixed with honey, then add lemon juice, oil, cinnamon, and brandy.
  • The flour previously sifted with the baking powder is added gradually, incorporating the egg whites gently.
  • Spoonfuls of this mixture are placed into the cupcake liners.
  • A little granola is sprinkled on each muffin with fingers, and they are baked for 20 minutes.
  • Once baked and cooled, use a kitchen brush to spread honey on the surface of the muffin and stick the granola on top for decoration.
