3/4 cups Gamesa® pancake mix
1/4 cups sugar
1/2 cups honey
2 tablespoons vegetable oil
1 tablespoon cinnamon powder
1 teaspoon baking powder
1 pinch salt
50 grams butter
3 eggs, (separating the yolks from the whites)
1 teaspoon brandy
1 pinch clove, in powder
1 cup granola
1 teaspoon lime juice

Beat the egg whites with a pinch of salt until stiff peaks form, gradually adding the sugar.
Meanwhile, preheat the oven and prepare the muffin molds with red liners.
The yolks are beaten until ribbon stage and mixed with honey, then add lemon juice, oil, cinnamon, and brandy.
The flour previously sifted with the baking powder is added gradually, incorporating the egg whites gently.
Spoonfuls of this mixture are placed into the cupcake liners.
A little granola is sprinkled on each muffin with fingers, and they are baked for 20 minutes.
Once baked and cooled, use a kitchen brush to spread honey on the surface of the muffin and stick the granola on top for decoration.
