Mini Corn Muffins

Prepare this recipe for mini corn muffins; they are delicious for any occasion, surprise your family with this treat!

  • 6 eggs
  • 8 ears corn, shredded
  • 1 teaspoon baking powder
  • 125 grams butter
  • 1 cup sugar
  • 1/4 panela cheese, smooth
  • 1/4 cups cow's milk
  • icing sugar

  • Beat the eggs, corn, baking powder, butter, sugar, and panela cheese in the blender (the corn should be previously cut off the cob, just the kernels).
  • If the corn is dry, soak it in milk before adding it to the blender.
  • Grease the cupcake mold (you may need more than one) with butter and breadcrumbs, then pour the mixture to half or 3/4 of each cup.
  • Place the mold in a low oven for 45 minutes to 1 hour.
  • To decorate, sprinkle powdered sugar on top of the mini muffins once they are unmolded.
