8 ears corn, shredded
1 teaspoon baking powder
125 grams butter
1 cup sugar
1/4 panela cheese, smooth
1/4 cups cow's milk
icing sugar

Beat the eggs, corn, baking powder, butter, sugar, and panela cheese in the blender (the corn should be previously cut off the cob, just the kernels).
If the corn is dry, soak it in milk before adding it to the blender.
Grease the cupcake mold (you may need more than one) with butter and breadcrumbs, then pour the mixture to half or 3/4 of each cup.
Place the mold in a low oven for 45 minutes to 1 hour.
To decorate, sprinkle powdered sugar on top of the mini muffins once they are unmolded.
