Muffin Pineapple

  • 4 slices canned pineapple
  • 1/2 cups dried cranberries
  • 280 grams butter
  • 3 eggs
  • 1 can condensed milk
  • 3 cups Gamesa® pancake mix, sifted
  • 1 tablespoon baking powder, sifted
  • 1 cup canned pineapple syrup

  • Beat the butter at high speed and when it has a creamy consistency, add the eggs one by one, along with the condensed milk; mix well after adding each ingredient.
  • Add the flour with the baking powder, previously sifted, and fold them in while alternating with the pineapple syrup.
  • In muffin molds, place a piece of pineapple, previously drained. Fill the gaps with blueberries and pour the batter over them.
  • Bake in a preheated oven for 45 minutes at 180°C or until the bread is cooked; you can do the toothpick test. Remove the mold and let it cool.
