Muffins with Ice Cream

A very quick and simple recipe with a special touch that will undoubtedly delight both kids and adults. My husband, my children, and I enjoy family moments that are sweetened with this special recipe.

  • 1 cup Gamesa® pancake mix
  • 1 cup wheat flour
  • 4 eggs
  • 1/2 cups vegetable oil
  • 1/2 cups sugar
  • 1 tablespoon baking powder
  • ice creams, of your preference

  • Preheat the oven to 180ºC.
  • Separate the yolks and the whites. Reserve the whites.
  • Beat the yolks with the sugar and oil until well combined. You must ensure that the sugar is completely integrated.
  • Sift the flours three times.
  • Whip the egg whites until stiff peaks form.
  • Gently fold in all the mixtures. If the mixture is too dry, add a splash of milk gradually until you have a manageable consistency.
  • Place the muffin liners in the muffin pan and fill them 3/4 of the way full.
  • Bake in the oven for 15 minutes. You should know your oven; if it heats up a lot, you need to keep an eye on it. Remember that to check if they are ready, you should insert a toothpick, and it should come out clean.
