Separate the yolks and the whites. Reserve the whites.
Beat the yolks with the sugar and oil until well combined. You must ensure that the sugar is completely integrated.
Sift the flours three times.
Whip the egg whites until stiff peaks form.
Gently fold in all the mixtures. If the mixture is too dry, add a splash of milk gradually until you have a manageable consistency.
Place the muffin liners in the muffin pan and fill them 3/4 of the way full.
