Pumpkin Muffins

These muffins are something special, as they contain no sugar. Very sweet and nutritious, perfect for tea time or when the kids come home from school.

  • 480 grams flour
  • 1 cup honey
  • 3 eggs
  • 1 tablespoon baking powder
  • 1 tablespoon baking soda
  • 1 teaspoon cinnamon powder
  • 240 grams pumpkin
  • 1 tablespoon vanilla essence

  • Blend 240 g of pumpkin (set aside).
  • In a large bowl, stir together the flour, cinnamon, baking soda, and baking powder, set aside.
  • Beat the egg until it doubles in size, add the honey, vanilla, and pumpkin, and mix thoroughly. Once mixed, gradually add the flour mixture.
  • Preheat the oven to 180ºC. In a silicone or aluminum mold, place muffin liners and fill them 3/4 of the way full.
  • Bake for 18 to 20 minutes.
