Dr. Bacon Muffins

If sweet flavors aren't your thing, try the Dr. Bacon style muffins. The combination of bacon and Gruyère cheese will be your allies in this recipe.

  • 8 slices bacon
  • 2 cups wheat flour
  • 1 pinch salt
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 egg
  • 60 grams butter, melted
  • 1 cup cow's milk
  • 3/4 cups Gruyère cheese, grated
  • 2 tablespoons sour cream

  • Start by preheating the oven to 200°C.
  • Cook the bacon until golden brown, then chop it and set aside.
  • In a deep bowl, mix the dry ingredients (flour, sugar, baking powder, and salt).
  • Using a hand mixer, beat the egg, melted butter, milk, and cream. Add the dry ingredients and mix lightly until incorporated.
  • Add the bacon and cheese. Fold in gently.
  • Pour the mixture into greased muffin molds.
  • Bake for 25 minutes or until a toothpick inserted in the center comes out clean. Let cool and unmold.
