Muffins with Olives, Peppers, and Cheese

My muffin recipe is different because I wanted to experiment with new flavors. I wanted to make a sweet-savory muffin, but I love the taste of peppers with cheese, so I opted for a filling of peppers with feta cheese, adding the special touch of olives.

  • 300 grams wheat flour
  • 1 tablespoon yeast
  • 1 teaspoon salt
  • 1 pinch ground black pepper
  • 250 milliliters cow's milk
  • 1 egg
  • 60 grams bell pepper
  • 40 grams green olives, pitted
  • 60 grams Parmesan cheese, grated
  • 40 grams feta cheese, grated

  • First, preheat the oven to 190°C for 5 minutes. Prepare the mold with paper liners for 12 units.
  • In a pan, sauté the peppers in butter with a little salt and ground black pepper.
  • In a bowl, mix the dry ingredients (yeast, salt, and pepper), add room temperature milk, the egg, olive oil, peppers, olives, and grated cheeses, reserving a little parmesan cheese, and mix everything until the ingredients are fully combined.
  • Fill the mold with the mixture up to 3/4 of the way and sprinkle the reserved cheese on top, then bake for 20-25 minutes until they have risen and are golden brown.
