Spinach and Apple Muffins for Kids

This recipe contains two of the best fruit and vegetable ingredients with incredible benefits for our bodies. Inspired by what is best for my babies to eat, I created this recipe after trying to get them to eat spinach and homemade muffins for a while. And the best part is they can take them for lunch or dinner.

  • 1 1/2 cups whole-wheat flour
  • 1/3 cups apple purée
  • 1 cup spinach, pureed
  • 1/2 cups raw sugar
  • 2 tablespoons canola oil
  • 1 egg
  • 2 tablespoons vanilla essence
  • 1/2 tablespoons baking soda
  • 1 tablespoon baking powder
  • 1/2 tablespoons salt
  • 1 tablespoon cinnamon

  • Preheat the oven to 180ºC.
  • In a bowl, combine the flour, baking powder, and spices and set aside.
  • In another bowl, mix the egg, spinach puree, apple puree, oil, sugar, and vanilla at low speed until well combined.
  • Gradually add the flour to this liquid mixture without overmixing.
  • Fill the muffin liners 3/4 full and bake for approximately 20 minutes.
