Yellow Lemon and Chia Muffins

  • 1/2 teaspoons baking soda
  • 1/2 teaspoons salt
  • 1/4 cups coconut oil
  • 1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 2 tablespoons lemon zest
  • 1 tablespoon lemon juice
  • 3/4 cups Greek yogurt, natural
  • 2 tablespoons chia seeds
  • 4 tablespoons butter
  • 190 grams cream cheese
  • 1/2 cups icing sugar
  • 4 tablespoons lemon juice
  • 1 lemon, sliced for decoration
  • petals, of organic flowers for decoration
  • peppermint, for decoration

  • Preheat the oven to 180°C.
  • In a mixer, beat the flour, baking soda, coconut oil, sugar, egg, vanilla extract, lemon zest, lemon juice, yogurt, and chia.
  • Place cupcake liners on a baking tray and fill the liners with the mixture up to ¾ full.
  • Bake for 15 minutes or until you insert a toothpick and it comes out dry. Remove from the oven and let cool.
  • For the frosting, blend the butter with cream cheese, sugar, and lemon juice in a blender. Reserve in a piping bag and decorate the muffins as you like.
  • Pour the frosting into a piping bag and decorate the muffins with lemon, petals, and mint.
