No-Bake Almond Mini Pie

  • 2 cups wholegrain crackers, for the base
  • 1/4 cups unsalted butter , melted, for the base
  • 1 1/2 cups almonds
  • 1 teaspoon ginger powder
  • 1 teaspoon cinnamon powder
  • 3 tablespoons brandy
  • 1 tablespoon vanilla essence
  • 1 cup maple syrup
  • 10 grams unflavored gelatin powder, hydrated and melted, (each packet contains 7 grams)
  • almonds, whole, for decoration
  • mint leaf , for decoration

  • Place the cookies in a plastic bag and crush them with a rolling pin. Put the crushed cookies in a bowl and mix with the melted butter until you get a manageable dough.
  • In individual tart molds (previously greased and lined with cling film), place a bit of the cookie mixture and press with your hands to shape it. Refrigerate until the consistency is firm. Set aside until use.
  • Chop the almonds into small pieces and mix them with the ground ginger, cinnamon, brandy, vanilla extract, maple syrup, and hydrated gelatin until well combined.
  • Fill the cookie base with the previous mixture until covered. Refrigerate until the consistency is firm and even.
  • Decorate with almonds and mint leaves. Enjoy as a dessert, you will love it!
