No-Bake Fruit Mini Tarts

  • 1 cup cookies, orange
  • 1 teaspoon cinnamon
  • 1 teaspoon lime zest
  • 1/2 cups butter, melted
  • 1 cup condensed milk
  • 1/2 cups table cream
  • 1 cup evaporated milk
  • 1/3 cups lime juice
  • 1 teaspoon vanilla essence
  • 3 envelopes unflavored gelatin powder, hydrated and melted (7 g each)
  • 1/2 cups strawberries
  • 1/2 cups kiwi
  • 1/2 cups peach
  • 1/3 cups cherries
  • 1/3 cups raspberries
  • peppermint

  • For the crust, in a food processor, process the cookies with the cinnamon, lemon zest, and butter until it forms a dough.
  • Place the mixture in small tart molds and use a spoon to press down until completely covered. Refrigerate for 30 minutes.
  • For the filling, blend the condensed milk with the cream, evaporated milk, lemon juice, vanilla, and melted gelatin.
  • Fill the tarts with the lemon cream and refrigerate until set. Unmold, decorate with the fruits, and serve.
