No-bake peanut cheesecake

  • 1/2 cups peanuts, toasted
  • 1 1/2 cups vanilla cookies
  • 1 butter, melted
  • 2 cream cheese, softened
  • 1 cup cow's milk
  • 1/2 cups peanut butter
  • 1 teaspoon vanilla essence
  • 1/2 cups sugar
  • 3 unflavored gelatin powder, hydrated
  • 2 cups whipping cream, fried
  • 1/2 cups cajeta
  • 1/2 cups toasted peanuts, for decoration

  • In a food processor, process the cookies with the peanuts until you obtain a fine powder.
  • Mix with the butter and pour into a 20 cm cake pan. Compact with a spoon and refrigerate for 15 minutes.
  • Blend the cheese with the milk, peanut butter, vanilla, sugar, and gelatin.
  • Whip the cream until soft peaks form. Gently fold the peanut mixture into the whipped cream.
  • Pour the previous mixture into the mold and refrigerate for 2 hours or until firm.
  • Unmold and decorate with cajeta and peanuts.
