Preheat the oven to 200 degrees Celsius. Mix the sugar with the pinch of salt and the flour.
Using the whisk mix with the cheese for a minute, add the eggs, the egg yolks and the vanilla.
Mix quickly until you get a smooth and homogeneous cream.
Lightly butter a round mold with a high edge and place a baking paper disk inside.
Mix the crushed cookies with the warm melted butter using a spatula
Pour the mixture into the mold and flatten to cover the bottom evenly. Pour the cream cheese and cook in the oven at 200 degrees Celsius for 10 minutes.
Decrease the temperature to 140 degrees Celsius and cook 35 minutes more
Allow to cool for 30 minutes then refrigerate at least 12 hrs in the mold.
