NY Cheese Cake

  • 4 eggs
  • 2 egg yolks
  • 600 grams cream cheese
  • 250 milligrams sugar
  • 50 grams cake mix
  • 1 teaspoon vanilla essence
  • 1 pinch salt

  • Preheat the oven to 200 degrees Celsius. Mix the sugar, a pinch of salt, and the flour.
  • Using a whisk, mix with the cheese for one minute, then add the eggs, egg yolks, and vanilla.
  • Mix quickly until you obtain a smooth and homogeneous cream.
  • Lightly butter a round high-edged mold and place a disc of parchment paper inside.
  • Mix the crushed cookies with the warm melted butter using a spatula.
  • Pour the mixture into the mold and flatten to cover the bottom evenly. Pour the cream cheese and bake in the oven at 200 degrees Celsius for 10 minutes.
  • Reduce the temperature to 140 degrees Celsius and cook for 35 more minutes.
  • Let cool for 30 minutes then refrigerate for at least 12 hours in the mold.
