Orange Snow

  • 5 oranges, for the ice cream
  • 1/2 cups sugar, for the syrup
  • 1 cup water, for the syrup
  • 3 teaspoons lime juice, for the ice cream
  • 1 pinch salt, for the ice cream
  • 1 lime, zest, for the ice cream
  • 1 orange, zest, for the ice cream
  • 1 cup chamoy, or chili piquín, for decoration

  • For the syrup, mix 2 parts water to 1 part sugar until fully dissolved. Add half a packet of previously hydrated powdered gelatin and let it cool.
  • Extract the pulp and juice from the oranges, avoiding the white part and seeds. Reserve the peels.
  • In a blender, add the orange juice along with the syrup and blend.
  • Strain the mixture and pour it into a glass container. Freeze for 5 hours but remember to mix with a whisk every 20 minutes to avoid crystallization.
  • Serve in the frozen orange peels. Decorate with chamoy, chili piquín, and mint leaves if desired.
