  • 1 kilo wheat flour
  • 1 cup water
  • 1 brown sugar
  • 10 cloves
  • 250 grams butter
  • 4 eggs
  • 1 teaspoon baking powder
  • 95 grams guava
  • 1 sprig fennel

  • Beat the eggs well and mix with the butter. Gradually add the flour, baking powder, baking soda, and grated lemon zest.
  • In advance, prepare a syrup with water, cinnamon, grated panela, guayabita, and cloves. This syrup should be thick, and when it is boiling, add a sprig of fennel. Let the syrup cool and add it to the flour mixture, stirring well to achieve a dark and compact dough.
  • Flour the table where you will roll out the dough. Roll out the dough with a rolling pin; be careful not to make it too thin.
  • Cut round cookies using a plate or cup upside down, with a diameter of 8 to 10 centimeters. Grease a baking tray and bake at 350°F until golden, and when you insert the tip of a knife, it comes out clean.
