Panna Cotta with Red Fruit Coulis

  • 1 liter whipping cream
  • 2 envelopes unflavored gelatin powder
  • 3 tablespoons water
  • 3 tablespoons vanilla essence
  • 1/4 cups sugar
  • 1 1/2 cups fruit of the forest
  • 1/3 packages mixed berries gelatin
  • 1/4 cups icing sugar
  • 1 tablespoon lime juice

  • Prepare the red fruit gelatin as indicated on the package and pour it into a dish with 1/2 cup of red fruits, then refrigerate for 2 hours.
  • In another dish, heat the cream with 1/4 cup of sugar and vanilla until it boils, stirring constantly to prevent sticking.
  • Soak the gelatin in cold water and dissolve it, then add it to the cream, continuing to mix until perfectly dissolved.
  • In the dish where we previously made the fruit gelatin, it should be set, and there we pour the cream and refrigerate until set.
  • Coulis: In a saucepan over low heat, add the remaining red fruits (reserve a few for decoration), powdered sugar, and lemon juice. Bring to a boil for 5 minutes.
  • Strain through a sieve, pressing with a fork to extract the juice well.
  • Unmold and create a coulis mirror, placing some red fruits on one side and a few mint leaves.
