Prepare the red fruit gelatin as indicated on the package and pour it into a dish with 1/2 cup of red fruits, then refrigerate for 2 hours.
In another dish, heat the cream with 1/4 cup of sugar and vanilla until it boils, stirring constantly to prevent sticking.
Soak the gelatin in cold water and dissolve it, then add it to the cream, continuing to mix until perfectly dissolved.
In the dish where we previously made the fruit gelatin, it should be set, and there we pour the cream and refrigerate until set.
Coulis: In a saucepan over low heat, add the remaining red fruits (reserve a few for decoration), powdered sugar, and lemon juice. Bring to a boil for 5 minutes.
Strain through a sieve, pressing with a fork to extract the juice well.
Unmold and create a coulis mirror, placing some red fruits on one side and a few mint leaves.
