A sophisticated, sweet dessert that is relatively difficult as it requires time and attention to achieve the ideal texture. Passion fruit is a tropical fruit similar to mango and is delicious in desserts.
In a bowl, mix the cookies with the butter. Press the mixture firmly onto the base of a previously greased springform pan. Freeze for 10 minutes. Remove from the freezer and set aside.
Dissolve the gelatin in 1/2 cup of water using a double boiler or in the microwave for 10 seconds. Let cool. Set aside.
Put a pot on the stove with the remaining water, sugar, and passion fruit pulp. Boil for 2 minutes. Remove from heat and cool completely. Skim off the foam that forms.
In a bowl, beat the cream cheese, sweetened condensed milk, and passion fruit pulp. Add half of the dissolved gelatin. Pour over the cookie base and refrigerate for 30 minutes. Remove from the refrigerator and set aside.
Whip 1 cup of whipped cream with the other half of the dissolved gelatin. Place in the mold and refrigerate again for 3 hours.
Remove from the refrigerator, unmold onto a platter, decorate with the remaining whipped cream and the candies. Serve.
