  • For the crust: In a food processor, add the flour, sugar and salt.
  • When the ingredients have been combined, add the butter and combine until the dough has a lumpy consistency.
  • Add cold water little by little until the paste is linked.
  • To the dough, give it a round shape and wrap in foil. Refrigerate for 10 minutes.
  • Remove the dough from the refrigerator and spread the dough on a tray with waxed paper and refrigerate for another 10 minutes.
  • To make the filling: In a bowl mix the sugar, flour and cinnamon. Add the vanilla and peaches and stir until the fruit is well impregnated with the mixture.
  • Preheat the oven to 176 ° C (350 ° F). Remove the dough from the refrigerator and start placing the peaches in the center in the way you prefer. You must be careful to leave a dough edge so you can wrap the peaches.
  • Once you have placed all the peaches and you have finished folding the edge of the dough, refrigerate for 15 minutes.
  • After this time, varnish the galette with the maple syrup and sprinkle the icing sugar. Bake for 30 minutes until the peach skin is a little wrinkled and the crust is lightly browned.
  • To serve, let cool 5 to 10 minutes.
