Peach Galette

This peach galette recipe is typical of French cuisine. The dough is very similar to that of crepes.

  • 1 teaspoon salt
  • 1/2 cups vegetable margarine
  • 1/4 cups water, chill (as needed)
  • 1/4 cups sugar
  • 2 tablespoons flour
  • 1/4 teaspoons cinnamon powder
  • 1 teaspoon vanilla essence
  • 2 peaches, (large, peeled, and pitted) sliced
  • syrup, maple (for brushing)
  • powdered sugar, for sprinkling

  • For the crust: In a food processor, add the flour, sugar, and salt.
  • Once the ingredients are combined, add the butter and mix until the dough has a crumbly consistency.
  • Add cold water gradually until the dough comes together.
  • Shape the dough into a round form and wrap it in plastic wrap. Refrigerate for 10 minutes.
  • Take the dough out of the refrigerator and roll it out on a baking sheet lined with parchment paper, then refrigerate for another 10 minutes.
  • To make the filling: In a bowl, mix the sugar, flour, and cinnamon. Add the vanilla and peaches, and stir until the fruit is well coated with the mixture.
  • Preheat the oven to 176 °C (350 °F). Take the dough out of the refrigerator and start placing the peaches in the center in the way you prefer. Be careful to leave an edge of dough so that you can fold over the peaches.
  • Once you have placed all the peaches and finished folding the edge of the dough, refrigerate for 15 minutes.
  • After this time, brush the galette with maple syrup and sprinkle with powdered sugar. Bake for 30 minutes until the peach skin is slightly wrinkled and the crust is lightly golden.
  • To serve, let cool for 5 to 10 minutes.
