A recipe so classic that never goes out of style are the peaches with rompopo. The rompope is a Mexican drink made by the nuns, this drink mixed with peaches tastes delicious.
Strain the peaches in syrup and set aside. Cut the peaches in half and again in half to have quarters.
Put to melt the butter in a pan and add the quarters of peaches. Sprinkle the sugar over the peaches and move carefully so as not to break them and caramelize.
Add the brandy to the hot pan to flame.
Once the alcohol has evaporated add the eggnog and mix carefully. Bathe the peaches constantly with the eggnog and leave for 2 to 4 minutes until the desired thickness is reached.
