A classic recipe that never goes out of style is peaches with rompope. Rompope is a Mexican drink that was made by nuns, and this drink mixed with peaches tastes delicious.
Strain the peaches in syrup and set aside. Cut the peaches in half and then in half again to make quarters.
Melt the butter in a skillet and add the peach quarters. Sprinkle sugar over the peaches and gently stir to avoid breaking them and to caramelize.
Add the brandy to the hot skillet to flambé.
Once the alcohol has evaporated, add the rompope and mix gently. Continuously bathe the peaches with the rompope and let it cook for 2 to 4 minutes until the desired thickness is reached.
