Peanut Butter Granola Balls

  • 1 cup Kellogg’S® coconut, raisins and honey granola
  • 2/3 cups shredded coconut
  • 1/2 cups peanut butter
  • 1/2 cups semi-dark chocolate chips
  • 1/3 cups honey
  • 1 tablespoon chia seeds
  • 1 tablespoon vanilla essence

  • Lightly toast the shredded coconut in a pan over medium heat. Stir it constantly to prevent burning. Once it is lightly browned, remove it from the heat.
  • Combine the coconut with the rest of the ingredients in a bowl until you have a manageable dough.
  • Form small balls with your hands or you can use an ice cream scoop to make them all the same size. Place the balls on a tray and refrigerate for 15 minutes so they become firmer.
  • Before serving, let them sit for about 5 minutes at room temperature.
