Peanut Cheesecake with Caramelized Bananas

It has a crunchy granola base with peanuts and chocolate chips, a smooth cheese filling with a hint of peanut butter, and to top it off: bananas covered in caramel.   • 1 1/2 cups granola, for the base
  • 1/2 cups peanuts, toasted, for the base
  • 1/2 cups chocolate chips, for the base
  • 3/4 cups butter, melted, for the base
  • 3 cream cheese, 190 g each
  • 1 cup whipping cream
  • 1 cup peanut butter
  • 1 teaspoon vanilla essence
  • 1/2 cups icing sugar
  • 1 envelope unflavored gelatin powder, (7 g) hydrated and melted
  • 1 cup raw sugar, for the caramel sauce
  • 2 tablespoons orange juice, for the caramel sauce
  • 1/4 cups whipping cream, for the caramel sauce
  • 1 pinch salt, for the caramel sauce

  • For the cheesecake base, process the granola along with the peanuts until you obtain a moderately coarse powder. Mix with the chocolate chips and the butter.
  • Pour the mixture into a cake pan lined with parchment paper, and using a spoon, spread it out to form a base. Freeze for 10 minutes in your LG LINEAR Top Freezer.
  • For the cheesecake, beat the cream cheese with the heavy cream for about 5 minutes. Add the peanut butter, vanilla, and powdered sugar. Once all the ingredients are incorporated, add the gelatin in a stream while continuing to beat.
  • Pour the cheesecake over the granola base and smooth the surface with an angled spatula. Refrigerate until set in your LG LINEAR Top Freezer.
  • For the caramel sauce, in a saucepan over low heat, cook the sugar with the orange juice until it forms a caramel. Add the heavy cream all at once and stir quickly with a whisk, cook until you obtain a sauce, add a pinch of salt. Cool slightly and refrigerate for 10 minutes in your LG LINEAR Top Freezer to achieve a thick consistency.
  • Remove the cheesecake from refrigeration and add some caramel sauce, place the bananas, and sprinkle with brown sugar. Caramelize with a torch, decorate with whipped cream, and serve.
