Peanut Marzipan Covered in Chocolate

  • 1/3 cups water
  • 1 cup sugar
  • 1/4 teaspoons cream of tartar
  • 200 grams peanuts, toasted and finely ground
  • 1 teaspoon vanilla essence
  • 1 egg white
  • 1/4 cups icing sugar
  • 1 cup bittersweet chocolate, melted

  • Heat the water in a pot over medium heat, add the sugar, and cook over low heat until a soft ball syrup forms (116°C).
  • Add the cream of tartar, remove the mixture from the heat, add the peanuts and vanilla extract, and mix.
  • Add the egg white, return to the heat, and cook over low heat for 5 minutes. Cool.
  • Place the previous preparation on a board covered with non-stick plastic, mix with the powdered sugar until forming the marzipan. Cover with plastic and shape into a 4 cm thick slab. Cut with a small round cutter. Set aside.
  • Dip the marzipans in the melted chocolate. Let dry on a rack and refrigerate for 10 minutes.
