Pear Dessert with Flaxseed Crumble

  • 8 pears, 8 pieces small pears filling, peeled, cored, and quartered
  • 1 cup blackberries, for the filling
  • 2 tablespoons raisins, for the filling
  • 1/4 cups lime juice, for the filling
  • 1 tablespoon lime zest, for the filling
  • 2 tablespoons agave syrup, for the filling
  • 1 tablespoon cinnamon powder, for the filling
  • 1/4 cups oats, for the crumble
  • 1/4 cups flaxseed, for the crumble

  • 2 tablespoons coconut oil, for the crumble
  • 1 cup yogurt ice cream, natural, for serving

  • Preheat the oven to 200° C
  • For the filling, heat a medium saucepan over medium heat and add the pears, blackberries, grapes, lemon juice and zest, agave honey, and cinnamon to taste, cook for 5 minutes or until the ingredients soften. Remove from heat and place in an oven-safe dish of your choice. Set aside.
  • For the crumble, add oats, flaxseed, cinnamon, agave honey, and coconut oil to the food processor until a crumbly dough forms. Set aside.
  • Place the crumble over the pear mixture until well covered.
  • Cover the preparation dish with aluminum foil and bake the mixture for 20 minutes. Remove the aluminum foil and bake for an additional 10 minutes to brown.
  • Remove from the oven, serve with yogurt ice cream, and enjoy.
