Pemoles

Pemoles are donut-shaped cookies made throughout the Huasteca region. They can be decorated with powdered sugar.

  • 1 kilo corn masa flour
  • 2 tablespoons baking powder
  • 1 1/2 cups water, warm
  • 1/2 kilos vegetable shortening
  • 3 eggs
  • 1 1/4 cups sugar
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon powder

  • Preheat the oven to 200 degrees Celsius for 20 minutes.
  • In a deep bowl, mix the flour with the baking powder. Add a little water to form a soft dough.
  • In another bowl, beat the lard and add the eggs one by one, without stopping to beat.
  • Incorporate the sugar, baking soda, and ground cinnamon into the egg mixture until well combined and creamy.
  • Gradually add the flour dough and work it with more water to soften it and form a compact ball.
  • Take small balls of dough and on a smooth surface, shape them into sticks. Close them into circles.
  • Grease baking trays with butter and arrange the pemoles.
  • Reduce the oven temperature to 150 and bake for approximately 10-15 minutes.
  • Remove from the oven and let cool.
