Pemoles are donut-shaped cookies made throughout the Huasteca region. They can be decorated with powdered sugar.

1 kilo corn masa flour
2 tablespoons baking powder
1 1/2 cups water, warm
1/2 kilos vegetable shortening
3 eggs
1 1/4 cups sugar
1 tablespoon baking soda
1 tablespoon cinnamon powder

Preheat the oven to 200 degrees Celsius for 20 minutes.
In a deep bowl, mix the flour with the baking powder. Add a little water to form a soft dough.
In another bowl, beat the lard and add the eggs one by one, without stopping to beat.
Incorporate the sugar, baking soda, and ground cinnamon into the egg mixture until well combined and creamy.
Gradually add the flour dough and work it with more water to soften it and form a compact ball.
Take small balls of dough and on a smooth surface, shape them into sticks. Close them into circles.
Grease baking trays with butter and arrange the pemoles.
Reduce the oven temperature to 150 and bake for approximately 10-15 minutes.
Remove from the oven and let cool.
