The pemoles are donut-shaped cookies that are made throughout the Huasteca. They can be decorated with icing sugar.

Ingredients

16 portions
  • 1 kilo cornmeal
  • 2 tablespoons baking soda
  • 1 1/2 cups Water, tibia
  • 1/2 kilos vegetable shortening
  • 3 eggs
  • 1 1/4 cups sugar
  • 1 tablespoon baking soda
  • 1 tablespoon cinnamon powder

Preparation

Preheat the oven to 200 centigrade for 20 minutes.
In a deep bowl, mix the flour with the baking powder. Add a little water to form a soft dough.
In another bowl, beat the butter and add the eggs, one at a time, continuing to beat.
Add the sugar, baking soda, and ground cinnamon to the egg mixture so that they integrate and have a creamy consistency.
Gradually add the flour dough and work it with more water to soften it and form a compact ball.
Take little balls of dough and and on a smooth surface form sticks. Close them in circles.
Grease baking pans with butter and arrange the peels.
Reduce the oven temperature to 150 and bake for approximately 10-15 minutes.
Remove from the oven and let cool.
