Pie or Tart Base

This recipe is the base for all sweet tarts or the pie of your choice; of all the recipes I've come across, this is the one I liked the most.

  • 1 1/4 cups flour
  • 1/2 cups icing sugar
  • 1 egg yolk, large
  • 100 grams unsalted butter, cold and cubed
  • 3 teaspoons water, cold

  • Put butter and flour in a pie dish and set aside.
  • You place the flour, sugar, and butter in a large bowl and, using your fingertips, make breadcrumb-like crumbs.
  • You add the yolk and water gradually until it has a smooth consistency, roll it out on a floured surface to prevent sticking, and cover the dish with the dough.
  • Refrigerate for 20 minutes and preheat the oven for 15 minutes at 180°C.
  • With a fork, poke the base of the pie so it doesn't puff up, and place a weight, which is parchment paper over the base and rice or beans to weigh it down.
  • Bake the base for 10 to 15 minutes.
