We crush the cookies and mix them with the butter. We line a 22cm diameter springform pan with this mixture.
We peel the apples and slice them using a mandoline. We cook them for 15 minutes in orange juice.
We beat the cheese with the 2 eggs and the 3 tablespoons of sugar. We pour this mixture over our cookie base.
Next, we layer the sliced apples that we cooked in orange juice on top of the cheese layer.
We mix the 120g of sugar with the flour and the butter. We will obtain a crumbly mixture (mix ingredients, do not knead). We place these crumbs over the apples as a topping.
We take the cake to the preheated oven at 180º for 25-30 minutes.
We take the cake out and sprinkle it with powdered sugar and cinnamon.
