Cold Apple Pie

This is an easy no-bake apple pie recipe, so making this dessert for any occasion will be very simple. Additionally, it is an economical pie, with easily accessible ingredients that we usually have at home. Enjoy this step-by-step process even with kids, and you can also make your own powdered sugar by blending some granulated sugar for 40 seconds. To ensure the cheese mixture maintains its consistency, it is important that the apple compote is completely cold.

  • 4 apples, peeled and quartered, for the compote
  • 1/4 cups brown sugar, for the apple compote
  • 2 star anise pods, for the apple compote
  • 1 tablespoon lime juice, for the apple compote
  • 1 teaspoon cinnamon, for the apple compote
  • 8 cookies, oatmeal
  • 2 cups double cream cheese, (cream cheese can also be used)
  • 3/4 cups icing sugar
  • 2 tablespoons vanilla essence

  • In a small pot over low heat, cook the apples with the sugar, anise, lemon juice, and cinnamon. Cook until the apples are soft. Let cool and set aside.
  • Place the cookies in a resealable bag and use a rolling pin to crush them into small pieces. Set aside.
  • Beat the double cream cheese with the powdered sugar and vanilla essence.
  • Place some of the cookies in a glass, then the apple compote, the cheese mixture, and repeat the process until the glass is full. Decorate with apples, cookie crumbs, and enjoy.
