Cheesecake with Dulce de Leche

The cheesecake is a classic dessert that is baked in the oven and is often a great option for getting started in the world of baking. Additionally, this version is decorated with dulce de leche and is made with Domino® Muscovado Sugar, which is perfect for sweetening your desserts and provides the authentic amber color, a result of the sugarcane molasses.   • 2 cups cinnamon cookies, ground, for the crust
  • 3 tablespoons Domino® raw sugar, for the crust
  • 1/2 cups walnuts, ground, for the crust
  • 3/4 cups butter, melted, for the crust
  • 3/4 cups Domino® raw sugar
  • 2 cups double cream cheese, in cubes, for the filling
  • 2 tablespoons cornstarch, for the filling
  • 1 teaspoon vanilla essence, for the filling
  • 1 cup whipping cream, for the filling
  • 2 eggs, for the filling
  • dulce de leche, for decorating
  • walnuts, ground, for decorating

  • In a bowl, mix the cinnamon cookie, Domino® Muscovado Sugar, the walnut, and the melted butter until you achieve a compact consistency. Place the pie crust in a 23-centimeter diameter greased and oven-safe dish. Spread the dough to cover the entire surface, including the edges, to make the base more even, and press the dough with a glass. Once the pie crust is ready, refrigerate for 30 minutes.
  • For the cheesecake: Blend the Domino® Muscovado Sugar, double cream cheese, cornstarch, vanilla extract, heavy cream, and eggs until you achieve a smooth and slightly thick mixture.
  • Pour the mixture into the mold with the cookie crust and bake the cheesecake at 170 °C for 30 minutes. When the time is up, turn off the oven and let it cool for 15 minutes without removing it from the oven, so it cools gradually. Take the cheesecake out of the oven and let it finish cooling on a rack; you can prepare the cheesecake a day in advance and once it's cool, store it in the refrigerator.
  • Once cooled, decorate the cheesecake with dulce de leche and walnuts. Enjoy it with your favorite drink!
