I love cheesecake, but sugar harms me, so I came up with a recipe that wouldn't affect my health and was quick to enjoy; so this is my recipe.

500 grams double cream cheese
1 can table cream
30 grams artificial sweetener, (or 30 packets)
1 tablespoon sugar
2 tablespoons unflavored gelatin powder
1/2 cups water, cold
cooking spray, buttery flavor
200 grams sugar free cookie
50 grams butter, melted

Grease a square mold of about 20 cm with aerosol oil lightly, then wipe with a paper towel to remove excess.
In a food processor, put the cookies until they are pulverized.
Add the melted butter gradually to the cookies in the food processor.
Pour the previous mixture into the pie mold and press until a firm base is formed, just at the bottom, leaving the sides free of cookie, set aside.
Hydrate the gelatin with cold water and dissolve it in a double boiler or in the microwave (at 30% power for one minute).
In a separate bowl, beat the cream, vanilla, and sugar substitute; when integrated, add the cheese and beat until a smooth mixture is achieved.
Add the gelatin to the previous mixture and continue beating for one minute.
Finally, pour the previous mixture into the mold with the cookie base we made earlier and refrigerate for about an hour.
