Sweet Potato Cheesecake in a Pan

  • 2 cups vanilla cookies, ground, for the crust.
  • 1/2 cups butter, melted, for the crust.
  • 2 cups cream cheese, at room temperature, for the filling
  • 2 eggs, separate the egg whites from the yolks for the filling
  • 1 egg yolk, for the filling
  • 1/4 cups whipping cream, for the filling
  • 1 cup icing sugar, for the filling
  • 1 lime juice, for the filling
  • 1 tablespoon cornstarch, for the filling
  • 1 purple sweet potato, in half, for the filling and for decoration
  • vegetable oil, for frying
  • 1 cup whipping cream, for decoration
  • 1 orange, for decoration

  • For the crust: Mix the cookie and butter until achieving a moist consistency.
  • Pour the cookie mixture into a T-Fal® Ingenio black saucepan (24 cm) and press with a glass to form the crust. Remove the handle and bake at 180 °C for 8 minutes.
  • For the cheesecake: Cook half of the sweet potato in boiling water in a T-Fal® Ingenio black saucepan (20 cm) for 40 minutes or until soft, carefully remove the skin from the sweet potato and mash the pulp until it has a puree consistency. Reserve in the refrigerator.
  • In a mixer with a paddle attachment, beat the cream cheese and powdered sugar until well incorporated, then add the cold sweet potato puree, the yolks one by one, the whipped cream, lemon juice, and cornstarch. Beat the egg whites until stiff peaks form. Gently fold both mixtures together with firm movements.
  • Pour the sweet potato mixture over the crust, spread it out, and bake at 170 °C for 30 minutes. Remove the sweet potato cheesecake from the oven and cool at room temperature.
  • With the other half of the sweet potato, make the decorations. Cut it into very thin slices and fry in plenty of oil for 3 minutes.
  • Unmold the sweet potato cheesecake in a pan and decorate with whipped cream, sweet potato chips, and orange peel.
