Cold Cheesecake

  • 380 grams cream cheese
  • 1 1/2 cups cookies, crumbled
  • 1/2 cups cow's milk
  • 1/2 cups sugar
  • 1 cup whipping cream
  • 1/2 cups water
  • 1 1/2 tablespoons unflavored gelatin powder
  • 90 grams unsalted butter

  • For the crust: In a bowl, place the crumbled cookies and the butter previously melted in the microwave or using a double boiler, and stir until forming a uniform paste.
  • Place the mixture in a round cake pan to form the crust and flatten it using a round container with a slightly smaller diameter than the pan until covering the entire bottom.
  • For the filling: First, hydrate the gelatin in the water until it completely dissolves.
  • In a bowl, whip the cream.
  • Pour the mixture into the molds where you placed the crumbled cookies.
  • Blend the remaining ingredients: cream cheese, milk, sugar, and gelatin (which you let set and then melt for 5 seconds in the microwave)
  • Add the blended ingredients to the whipped cream and integrate them firmly with a spatula.
  • Refrigerate the molds for at least 2 hours.
  • When removing from the refrigerator, garnish with jam and fruits of your choice.
