Cold Cheesecake with Cookies

  • Beat the sugar with the cheese, making sure they mix well.
  • In a glass, place about 100 milliliters of milk and dissolve the two packets of rennet.
  • Place the cream, the rest of the milk, the vanilla, and the cheese with the sugar we mixed earlier in a saucepan over low heat. When it boils, lower the heat and add the rennet. Mix and let it simmer on the lowest heat possible, waiting a few minutes for the mixture to thicken. After the time has passed, turn off the heat and remove the saucepan.
  • While you wait for it to cool down a bit, go ahead and prepare the base. Place all the whole chocolate cookies that fit into a mold and then fill the gaps with pieces. Try to fill it as much as possible.
  • Pour the cream cheese over the cookies and wait for it to cool down quite a bit before putting it in the fridge.
  • Finally, add the liquid caramel and leave the cake unformed until the very moment of serving.
