Fruit and Cheese Cake

This incredible cake with a base of Toks® granola and cookie, filled with a creamy mixture of cream cheese with white chocolate and many colorful and fresh fruits, will be the ideal cake for you to prepare for your guests and surprise them with this fun dessert of many colors and flavors.

  • 2 cups Toks® mazahua granola, for the base
  • 1 cup cookies, orange, for the base
  • 3/4 cups butter, melted, for the base
  • 1 cup white chocolate, for ganache of the filling
  • 1/2 cups whipping cream, warm, for ganache
  • 2 cream cheese, (190 g each) cut into cubes for the filling
  • 1/2 cups sugar, for the filling
  • food coloring, for filling
  • 1 cup grapes, for decoration
  • 1 kiwi, sliced for decoration
  • 1 peach, for decoration
  • 1 cup raspberries, for decoration
  • 3 maraschino cherries, for decoration
  • 1 cup blueberries, for decoration
  • 1 cup strawberries, halved, for decoration
  • 1/8 cups chia seeds, for decoration
  • 1/8 cups toasted sesame seeds, for decoration
  • 1/8 cups pistachios, peeled, for decoration
  • peppermint, for decoration

  • For the base, in a processor, place the Mazahua Toks® Granola with the cookies and butter, process until it forms a dough, place the mixture in a rectangular tart pan and press down with a spoon. Refrigerate until the butter hardens.
  • For the filling: In a bowl, mix the warm whipping cream with the chocolate until combined.
  • In a bowl, beat the cheese with the sugar, add the ganache, and divide into 5 bowls. Color each bowl a different color: blue, purple, pink, yellow, and green. Place your mixtures in pastry bags and fill the cake, being careful not to mix the colors. Refrigerate for 1 hour or until well set.
  • Remove from refrigeration, decorate with fruit, mint, and seeds. Serve and enjoy.
