Blueberry Lemon Pie

  • 2 1/2 cups lime cookies, crumbed, for the crust
  • 3/4 cups butter, melted, for the crust
  • 3 cups cream cheese, for the filling
  • 1 1/2 cups condensed milk, for the filling
  • 1 tablespoon lime zest, for the filling
  • 1/4 cups lime juice, for the filling
  • 2 cups whipped cream, for the filling

  • Mix the crumbled cookies and melted butter in a bowl. Then, press into a mold and flatten with your hands to form a compact crust. Freeze the pie crust for 10 minutes.
  • While the crust is freezing, prepare the filling. Use a mixer with the paddle attachment to beat the cream cheese until smooth. Then, gradually add the condensed milk, continue mixing, and add the lemon zest, lemon juice, and blend everything again. Remove from the mixer and set aside in the same bowl.
  • Fold in the whipped cream into the mixture gently. Finally, add the Blueberries – Berries Paradise® and fold in gently again.
  • Carefully pour the filling over the pie crust and refrigerate for at least 2 hours.
  • Once ready, decorate the blueberry lemon pie with a bit of whipped cream, lemon zest, and Blueberries – Berries Paradise®.
