This lemon pie recipe is a classic dessert in a Mexican home, it is a simple cold pie to prepare and it is also delicious.

For the mixture, combine the cream cheese bars, the can of sweetened condensed milk, half of your whipping cream, and the sugar. Mix very well, then add the lemon juice and lemon zest. Next, in a cup of water, hydrate the gelatin and heat it in the microwave for 15 seconds, pour it into the mixture, and mix.
To start with the base, take the vanilla cookies and crush them in a blender or food processor. Melt the butter and pour it over the crushed cookies. Arrange them in the baking dish without leaving any spots uncovered and refrigerate for 15 to 20 minutes.
Finally, take out the hardened base and pour the mixture in. Refrigerate for 6 hours or freeze for approximately 2 hours.
To decorate, whip the leftover cream until stiff peaks form. Remove the pie once it's ready and pour the cream over the lemon layer, and slice the lemon into rounds and place them as desired.
