Pear and Almond Tart

  • 150 grams flour, for the dough
  • 75 grams butter, for the dough
  • 50 grams sugar, for the dough
  • 2 tablespoons cow's milk, for the dough
  • 1 teaspoon salt, for the dough
  • 2 tablespoons lime zest, for the dough
  • 125 grams butter
  • 250 grams sugar
  • 3 eggs
  • 1/4 cups orange juice
  • 50 grams flour
  • 250 grams almond flour
  • 1/4 teaspoons baking powder
  • 3 pears, peeled and cut into half moons
  • 1/4 cups almonds, sliced

  • Preheat the oven to 170° C.
  • For the dough, in a bowl mix the flour with the butter, sugar, milk, salt, and zest until a dough forms. Chill in the refrigerator for 20 minutes. Roll out on a floured surface and cover a 24 cm diameter tart pan. Refrigerate.
  • For the filling: In a bowl, beat the butter with the sugar until pale, add the eggs one by one, the orange juice, and gradually the flours and baking powder.
  • Place the pears on the tart base, pour the previous mixture, add the almonds, and bake for 35 to 40 minutes or until the tart is cooked. Cool.
  • Refrigerate the tart for 1 hour, decorate with powdered sugar and almonds.
